The fish used to be wrapped in fermented rice which could preserve the meat for months. After the fish had been successfully preserved and used, they would throw the rice away!
In the Edo period (between 1603 and 1868), the fish began to be arranged in such a way that the rice could be eaten along with it. The rice was no longer used for fermenting the fish and began to be mixed with vinegar, vegetables, and dried foods.
Sushi began being sold in the United States in the early 1900’s once Japanese people began to immigrate. However, the first American sushi restaurants did not begin to pop up until the 1960’s in large cities like New York City and Los Angeles. In fact, the California roll was invented in Los Angeles by putting avocado in place of the tuna in a maki roll.
